 Salad Dressing
 1  Mango, peeled and cut into bite sized pieces
 1/2  Pineapple, fresh, cut into bite sized pieces
 1.5 cup or 375 ml  Strawberries
 1/2  Small cantaloupe, cut into bite sized pieces
 1  Small papaya, cut into bite sized pieces
 2  Medium bananas, peeled and sliced
 Mojito Dressing  
 2 tbsp or 30 ml  Canola oil
 2 tbsp or 30 ml  Lime juice
 1 tsp or 5 ml  Lime Peel
 1/2 cup or 125 ml  Club Soda
 2 tbsp or 30 ml  Fresh mint leaves
 1 tsp or 5 ml  Sugar
  2 tbsp or 30 ml  White rum (optional)

Prepare all fruits and place in serving bowl and toss together lightly.

In a container, combine canola oil, lime juice, zest, club soda, rum (if using), mint leaves and sugar.  Mix well.  Drizzle dressing over fruit salad.

Serve immediately.

Note:  Salad can be prepared in advance, but do not add bananas until just before serving.
