2 cups or 500 ml  Hamilton’s barley flour
3 tsp or 15 ml  Baking Powder
1/2 tsp or 2 ml  Salt
1 tsp or 5 ml  Mixed dried herbs
(examples are oregano, thyme, basil, rosemary)
1 cup or 250 ml  Creamed Cottage Cheese (2%)
3 tbsp or 35 ml  Milk
1/3 cup or 75 ml  Vegetable oil
 1  Egg yolk, slightly beaten

In a medium-sized bowl combine barley flour, baking powder, salt and herbs. In another bowl, stir together cottage cheese, milk and oil. Add this mixture to the flour mixture, stirring until moistened.

Turn out onto a floured surface and knead 5 or 6 times until smooth. Place on a greased baking sheet and pat into an 8” (20 cm) circle.

With a floured knife, cut circle into 10 wedges and separate each wedge slightly. Brush with beaten egg yolk and, if desired, sprinkle with herbs or parsley.

Bake at 400ºF for 30 minutes until slightly browned.
