 2  Large eggs
 4  Egg whites
 3/4 c or 175 mL  Evaporated skim milk
 2 tbsp or 30 mL  Dijon mustard
 1.5 c or 375 mL  Light Swiss cheese, grated
 1/2 c or 125 mL  Onion, chopped
 1 pkg or 350 g  Frozen broccoli florets, thawed and drained
 3/4 c or 175 mL  Ham, diced
 1/2 c or 125 mL  Low-fat cheddar cheese, grated

Beat together egg, egg whites, evaporated skim milk and mustard.  Add half the Swiss cheese, onion, broccoli and ham.  Sprinkle with remaining cheese.  Pour mixture into a greased pie pan (or 9” square pan).  Bake in 180°C (350°F) oven for 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 5 to 10 minutes and serve.
