Egg whites |
| 3/4 c or 175 mL |
Evaporated skim milk |
| 2 tbsp or 30 mL |
Dijon mustard |
| 1.5 c or 375 mL |
Light Swiss cheese, grated |
| 1/2 c or 125 mL |
Onion, chopped |
| 1 pkg or 350 g |
Frozen broccoli florets, thawed and drained |
| 3/4 c or 175 mL |
Ham, diced |
| 1/2 c or 125 mL |
Low-fat cheddar cheese, grated |
Beat together egg, egg whites, evaporated skim milk and mustard. Add half the Swiss cheese, onion, broccoli and ham. Sprinkle with remaining cheese. Pour mixture into a greased pie pan (or 9” square pan). Bake in 180°C (350°F) oven for 35 to 40 minutes or until a knife inserted near the center comes out clean. Let stand 5 to 10 minutes and serve.
