Egg In Ham Cup

Eggs
  Nonstick spray
1 Low sodium, extra lean, cooked ham
2 tbsp or 30 ml Shredded cheddar cheese, reduced fat, divided
2 Eggs
2 tbsp or 30 ml Low-fat plain yogurt or sour cream
2 tsp or 10 ml Finely chopped fresh parsley
To taste Fresh ground pepper
  1. Spray a 10 oz (300 ml) microwaveable ramekin or custard cup with vegetable spray.
  2. Place ham slice in ramekin. Sprinkle with onion and 1 tbsp (15 ml) shredded cheese.
  3. In a small bowl, beat together eggs, yogurt and pepper until blended; pour into ramekin. Sprinkle with parsley and remaining cheese.
  4. Cover loosely with plastic wrap, turning it back slightly to vent.
  5. Microwave on medium-high for 2-1/2 minutes to 3 minutes or until cooked as desired.
  6. Remove from microwave but do not remove plastic wrap; let stand for 1 minute.
  7. Remove plastic wrap and serve.
